- Avec la carcasse de la poire qui a servi à faire les billes on va réaliser une gelée glacée. Venir mettre dans un mixeur les poires, mettre deux feuilles de gélatine et ensuite dans un plat. Mettre au congélateur 25 minutes


- Faire cuire la moitié des billes de poires au beurre et au rhum.

- Pour le montage : mettre dans le fond de tarte cuit la crème pâtissière à la poire, et mettre les élément de décor sur la tarte
